The old saying goes, “Breakfast is the most important meal of the day.” It’s also the meal I miss most often. Mornings are rushed, time is short, and preparing food takes up valuable time. Making these incredibly tasty breakfast egg bites in the evening solves the problem.
This recipe takes less than fifteen minutes to assemble and cook, tastes out of this world, and is surprisingly healthy. These breakfast bites are not only keto friendly, they’re gluten free as well. This makes for a great breakfast to prepare in advance, and take on the go. If you’re not using an air fryer, all of my recipes can also be made on a sheet pan in the oven.
Air Fryer Prosciutto Curry Egg Bites
- Air Fryer
- Muffin tin
- 1/2 lb sliced prosciutto
- 6 eggs
- 1 can olive oil spray
- 1 tsp salt, divided
- 1 tsp freshly ground pepper, divided
- 1 tbsp curry powder, divided
- Preheat air fryer, or oven to 400 degrees.
- Spray muffin tin cups with olive oil, and line each hole with prosciutto.
- Crack an egg into each cup, and top with curry, salt, and a pepper.
- Place in the air fryer, or oven and cook for 11 minutes.
