Zucchini is one of the most versatile vegetables there is. It has a mild, complementary favor that makes it a favorite among home chefs. It also happens to be packed with nutrients, high in antioxidants and is good for both your heart and waistline. Not to mention it is also cheap at your local grocery store and, in the summer months, incredibly easy to grow yourself (even if you don’t have a green thumb). This veggie is an all-around winner.

The unique flavor palate in this air fryer zucchini recipe comes from the mix of spices. After cutting the zucchini into quarter-inch slices, place them in a bowl and add a tablespoon of olive oil to make the spices stick (and add a healthy fat to your dish). Salt and pepper are accompanied by a pinch of cayenne to give it a little kick. But the flavor is taken up a notch by the Herbes de Provence mix.

If you’ve never used this mix of spices before, it’s definitely one to add to your spice rack (link below). The mix originated in France, and was popularized in American cooking in the 1960s by famed chef Julia Child. Typically the mix consists of thyme, oregano, basil, rosemary, savory, marjoram, tarragon and bay leaf. If you cook often, you may already have many of these spices in your home and could make your own mix. In addition to using it to season veggies like our air fryer zucchini, it adds great flavor to chicken, lamb and fish.

Hand toss your zucchini slices in the oil and seasoning mix until well covered. To make clean-up a cinch, be sure to line your air fryer pan in aluminum foil. Arrange your slices in a single layer in your air fryer, then generously top them with shredded parmesan cheese.

Equipment

  • Air Fryer, or Oven (Add 50 Degrees)

Ingredients
  

  • 1 Zucchini
  • 1 tbsp Olive Oil
  • 1 cup Parmesan Cheese
  • 1 tsp Herbes De Provence
  • 1 pinch Cayenne Pepper

Instructions
 

  • Preheat the air fryer to 400 degrees.
  • While the air fryer is preheating, slice one zucchini into 1/4 inch pieces (1/2 inch if you prefer crispier), and add to a bowl. Cover zucchini with Olive Oil, and add spices as well as salt and pepper to taste. Mix together well, and place on air fryer tray.
  • Cook for three minutes, or until cheese has just started to brown on top.

Notes

All air fryers cook at different speeds.  These recipes are meant to be a general guide.  Cooking times depend on various factors including thickness, cut, and type of meat used.  I use an Instant Pot Vortex Plus shelf air fryer.  If you’re using something different, especially a bucket type air fryer, I advise keeping an eye on food so it doesn’t under, or overcook.
