Equipment

  • Air Fryer
  • Pyrex oven safe glass dish
  • Large Bowl

Ingredients

  • 1 Russet potato
  • 2 tbsp sour cream
  • 1 tbsp ranch dressing
  • 2 slices thick cut bacon crumbled
  • 1 tbsp whole milk
  • 1/2 tbsp butter
  • 1/4 cup mild shredded cheddar cheese
  • 1 tsp olive oil
  • 1 bunch chives
  • 1 pinch salt
  • 1 pinch freshly cracked black pepper

Instructions

  • Preheat air fryer or oven to 390 degrees.
  • With a fork, poke 4 to 8 sets of holes into your potato. Coat or spray with olive oil, and season with salt and pepper to taste.
  • Put your potato in a Pyrex oven safe glass dish, and add to the air fryer, or oven for 35 - 40 minutes.
  • Allow potato to rest 10 minutes. Air fry bacon at 400 degrees for 7 - 8 minutes during this step.
  • Slice potato in half lengthwise, and hollow out the middle into a large bowl. Combine milk, butter, 1 tbsp of sour cream, bacon, cheddar cheese, salt, and pepper to taste and mix well.
  • Add stuffing back into potato halves, and place back into the air fryer, or oven for 10 minutes at 350 degrees.
  • Top with ranch dressing, 1 tbsp of sour cream, and sliced chives.

Notes

All air fryers cook at different speeds.  These recipes are meant to be a general guide.  Cooking times depend on various factors including thickness, cut, and type of meat used.  I use an Instant Pot Vortex Plus shelf air fryer.  If you're using something different, especially a bucket type air fryer, I advise keeping an eye on food so it doesn't under, or overcook.
