If you’re looking for a healthy meal with a delicious flavor profile, this air fryer prosciutto-wrapped cod and asparagus is guaranteed to become a favorite on your menu. As with all of my recipes, it is also quick, delectable and with minimal cleanup. Adding asparagus makes this an easy one-pan meal with a healthy veggie serving that tastes as good as it looks, and it’s done in ten minutes.

Cod is a tender, white, flaky fish with a mild taste that begs for an interesting flavor pairing. It is loaded with lean protein, vitamin B-12, omega-3s and other vitamins and minerals to suit a balanced diet. It is very low calorie with virtually no fat. With its salty, buttery flavor, prosciutto is a perfect match with air fryer cod. This Italian dry-cured ham also has a relatively low calorie and fat content and packs 8 grams of protein into two thin slices.

Preparing this recipe is a cinch. Start by pre-heating your air fryer. Cut cod into two equal sized portions and season to your taste with salt and pepper. Melt two tablespoons of butter and set it aside for a dipping sauce for the air fryer cod. Take one slice of prosciutto and wrap it semi-tightly around the fish.

Place your wrapped cod on a tray wrapped in foil, and lightly coated with oil or cooking spray. Repeat the above steps with your asparagus. I recommend wrapping four or five asparagus stems in one slice of prosciutto. Place the asparagus on the same tray and cook in the air fryer for 10 minutes. You’ll know your air fryer cod is done if you lightly press on it and it is firm. Also, once fully cooked, the cod will flake when cut into with a fork.

This dish is perfect atop wild long grain rice or even served with a baked (or air-fried) sweet potato. Whatever you choose, this recipe will not disappoint, nor will it break the bank! This easy dish will cost you just about six dollars per serving.

Equipment

  • Air Fryer, or Oven (50 degrees warmer)

Ingredients
  

  • 1/2 lb Cod
  • 3 oz Prosciutto
  • 1 bunch Asparagus
  • 2 tbsp butter optional

Instructions
 

  • Preheat the air fryer to 400 degrees.
  • While the air fryer preheats, cut the cod into two equal pieces. Season cod and asparagus with salt and pepper to taste. Wrap cod and several pieces of asparagus with prosciutto, and place on a lightly oiled foil wrapped air fryer tray. Melt butter for dipping sauce.
  • Cook for 10 minutes.

Notes

All air fryers cook at different speeds.  These recipes are meant to be a general guide.  Cooking times depend on various factors including thickness, cut, and type of meat used.  I use an Instant Pot Vortex Plus shelf air fryer.  If you’re using something different, especially a bucket type air fryer, I advise keeping an eye on food so it doesn’t under, or overcook.

  1. added thinly sliced dried chorizo on top of the fish before I wrapped with bacon (didn’t have prosciutto) – AHHHMAZING! Loved this recipe. Served with rice cooked with sautéed garlic, onions, and more chorizo, and tomato paste – used chicken stock instead of water. DELISH recipe!
